This pesto recipe is intended to be part of a low sodium diet but can be enjoyed by all. To best bring out the flavor, add to pasta dishes with freshly seasoned proteins and sauteed vegetables.
- 1/3 C grated parmesan cheese
- 1 C fresh basil
- 1 C pine nuts (can be substituted with walnuts)
- 1 C extra virgin olive oil
- 2 T lemon juice
- 1/2 tsp kosher salt
- 1 T minced garlic
- Combine all ingredients in a food processor.
- Run food processor on high until creamy.
- Add salt to taste.
