Easy Southwest Salad

Without a doubt, this southwest salad is my favorite lunch on a busy work day when I need a boost of energy. It’s healthy, satiating, and super satisfying It’s so filling, I don’t typically add chicken or tofu, but 3 oz. of either can be added for a salad dinner!
 Ingredients:

  • 2 Cup Romaine
  • 1/4 C Corn
  • 1/4 C Black beans
  • handful of grape tomatoes, sliced
  • 1/2 avocado, cubed
  • pinch of cilantro, chopped
  • spritz of fresh lime juice
  • 1 oz gorgonzola (or your favorite cheese-I can’t resist gorgonzola  )


Just mix it all together! The combination of flavors are so powerful you won’t even need to add dressing. Promise 🙂
