I wholeheartedly believe that a filling, tasteful snack is an important way to get through the work day. This parfait is easy to pack for a snack or get in quick for a fast breakfast. Just sprinkle the toppings on top of the cottage cheese and mix if you like. Cottage cheese is packed with protein to help fill you up during a long day. Although I’m typically a skim-milk girl, for cottage cheese I recommend using 1% as it’s a little bit more filling and does a better job bringing out the flavor of berries.
- 1 C 1% cottage cheese
- 1 tbsp agave nectar
- handful of raspberries, fresh
- 2 Tbsp pistachios (or 2 tbsp granola, or both :] )
