There really is no better time of the year to enjoy granola than winter! When you need a little extra energy to survive the cold and gloom, granola just seems like the perfect addition to a breakfast or a snack. And the best part about granola? Homemade is easy. Like, really really easy.

Ingredients
- 4 cups oats
- 1 cup pumpkin seeds
- 1 cup chopped walnuts
- 1/2 cup honey
- 1/2 cup craisins
- 2 tsp cinnamon
- 2 tsp vanilla extract
Directions
1. Preheat oven to 350 F. In a bowl, toss oats in honey, vanilla extract and cinnamon. Spread out on sheet tray. All oats should be touching, about 1/2 inch thick.
2. On a separate sheet tray, lay out walnuts and pumpkin seeds. Drizzle with olive oil.
3. Let both sheet pans cook for about 10-15 minutes, until lightly browned. Check regularly to make sure granola doesn’t burn. Once cooked, let cool, then combine all ingredients in a bowl, including craisins.
