Ingredients:

  • 4 cups oats
  • 1 cup pumpkin seeds
  • 1 cup chopped walnuts
  • 1/2 cup honey
  • 1/2 cup craisins
  • 2 tsp cinnamon
  • 2 tsp vanilla extract
Directions:
1.
Preheat oven to 350 F. In a bowl, toss oats in honey, vanilla extract and cinnamon. Spread out on sheet tray. All oats should be touching, about 1/2 inch thick.
2. On a separate sheet tray, lay out walnuts and pumpkin seeds. Drizzle with olive oil.
3. Let both sheet pans cook for about 10-15 minutes, until lightly browned. Check regularly to make sure granola doesn’t burn. Once cooked, let cool, then combine all ingredients in a bowl, including craisins.
