To say I love tomatoes is a total understatement. They’re vibrant and juicy, making them so exciting to bite into. That’s why I love throwing together a simple tomato salad.
Tomatoes have plenty of nutritional benefits as well. They have plenty of nutrients such as vitamin A, vitamin C, vitamin K, and potassium. One of it’s most notable nutrients is lycopene, a pigment in the carotenoid family. In epidemiological studies, diets rich in lycopene have shown a relationship with lower risk of cancer and cardiovascular disease risk.
They’re also freaking delicious. The juiciness of a tomato makes it such a refreshing food on a hot summer day. They’re also so flexible in recipes, that they can be combined with so many different flavors and still taste amazing.
Below is one of my favorite tomato salad recipes. The best part about this recipe is that other herbs or acids can easily be swapped with the herbs and acids listed, yet still provide an awesome salad.
