Watermelon Radish Recipe

Over the past few years I have absolutely fallen in love with the watermelon radish. First off, it’s gorgeous, making it such an exciting food to enjoy as spring starts to come around. Second, it’s taste is just as vibrant as it’s appearance. As soft and gentle as it looks, watermelon radish as a spicy kicky whenever eaten raw. But don’t be afraid, this just makes it an incredible flavor to add to salads and crudite platters!

One of my favorite ways to enjoy a watermelon radish is to mellow out it’s flavor a bit. This can easily be done with a little cooking or with a little dairy.

Watermelon Radish Platter with Feta Dip

This watermelon radish platter with feta dip is super easy to make. I love enjoying this as a snack or as part of a crudite platter to impress friends before a meal.

** Note: A true Mandolin is required to cut the radishes properly. A knife alone or simple blade will not do. Using a knife will result in thick pieces, and potentially bloody fingers.**

Ingredients

  • 4-5 Watermelon Radishes
  • 1 Cup Reduced Fat Cultured Sour Cream
  • 1/4 cup Feta
  • 2 Tbsp chopped dill
  • 1 Tbsp lemon juice

Directions

  1. Soak radishes in a large bowl with cool water. Scrub them well with a clean vegetable brush. When done, dry with a towel and cut the root and stem off of the radishes.
  2. With a mandolin, cut radishes very thin, about 1/8 of an inch. Or you can experiment with the thickness. Letting it be too thick will make them incredible hard to bit and work with.
  3. In a bowl, add feta and mash with a fork or potato masher until finely crumbled. Then add sour cream, dill, and lemon juice. Stir until well distributed. For a smoother consistency, blend in a blender.
  4. Add dip to a small bowl and plate the watermelon radish, that’s it! Enjoy as a simple side dish or appetizer!
