Crispy Pear and Goat Cheese Salad

Need to switch up your salad game and looking for something a little bit more exciting? This salad will delight your palate and satisfy your cravings. The best part about the salad is that you can pack this as a refreshing lunch, or enjoy this for dinner with a glass of white wine.
Serves one

  • 1 Cup Mixed greens
  • 1/2 C arugula
  • 1/2 cup beets, shaved or thinly sliced
  • 2 tbsp goat cheese
  • 1/2 pear, sliced thin
  • 2 tbsp pistachios (deshelled)
  • 3 oz. grilled chicken
  • 1 tsp olive oil

Throw all the ingredients together and enjoy!
