Simple Citrus Salad

I have to be honest, I never thought about throwing a bunch of citrus on a plate before until the explosion of food photography on social media. This recipe is 100% inspired by all of the citrus plates I’ve seen over the past few years, and I’m totally okay with giving credit to all of them… whether seen or unseen.

But it wasn’t until I decided to be a copy cat that I actually fell head over heels for oranges. Yes, you read that correctly. It may be hard to believe but I’m not the biggest fan. (#pickyeatersclub). But it wasn’t until I bought a bunch of different types of oranges to experiment with for this salad that I realized oranges are awesome. I guess I just wasn’t eating the ones I truly enjoy! There are so many different varieties of oranges that exist, I would highly recommend experimenting to find one you enjoy.

Simple Citrus Salad Recipe

Ingredients

  • 2 Blood Oranges
  • 2 Tangelo Oranges
  • 1 Grapefruit
  • 1/4 cup Goat cheese
  • 2 tbsp Olive Oil
  • 2 tbsp Honey
  • 1/4 cup fresh Dill

Directions

  1. Peel oranges and grapefruit and cut into slices and combine in a bowl or on a plate. You can either cut into circles, or thick chunks. If you’re not going to eat it immediately, chunks that include the skin will work better.
  2. In a small bowl, whisk together olive oil, honey, and dill until well combined. Then drizzle on top of citrus. If you’re working with chunks, toss citrus well in dressing.
  3. Add crumbled goat cheese, then plate and serve!

Don’t Throw Those Peels Away!

**STOP! Before you throw those citrus peels in the garbage remember that you can still do something with it! I love all the uses I can find with orange peels, such as:

  • Heating on the stove with water with spices for potpourri
  • Boil in water to make a tea
  • Zest and use in baked goods or other recipes!
  • Adding to mulled wine
  • Adding to sangria (I clearly like wine, lol).
  • Add to vinegar for a fragrant house cleaner.
  • And last but not least, throw in your compost.
