Simple Snap Pea Side Dish

It’s snap pea season! What better way to enjoy them than with a simple snap pea side dish?

I’ve always loved snap peas, but have developed a special fondness when I started growing them a few years ago. Both snap pea shoots and peas are so fragrant, it’s hard not to pop a few in your mouth when you’re harvesting them. Snap peas also grow incredibly tall and fast, making them a great crop for beginner gardeners.

I also love how snap peas go with everything. Their pleasant crunch and distinct flavor makes them loved by many cultures. They can be eaten raw as a snack, tossed into a salad, or cooked into a stir fry. But I’ve particularly enjoyed loving them for them. That’s why I love cooking up a simple snap pea side dish to highlight their incredible fragrance and flavor. Keep reading for one of my favorite snap pea recipes.

How to Make this Simple Snap Pea Dish

Ingredients:

  • 2 Cups Snap Peas
  • 1 Handful Watercress
  • 1/4 cup Walnuts, Crushed
  • 1/3 cup Pecorino Romano, Grated
  • 1 Tbsp Dried Thyme
  • 1 Tsp Garlic Powder
  • 2 Tbsp EVOO
  • Pinch of salt

Directions:

  1. In a small bowl, combine snap peas, thyme, garlic, 1 tbsp of EVOO, and a pinch of salt. Toss until spices are well distributed.
  2. Add 2 tsp of EVOO to a saute pan and bring up to medium heat. Add snap peas and saute until lightly brown on both sides, ~5 minutes on each side.
  3. When snap peas are cooked, add to a bowl with walnuts, watercress, and grated pecorino romano. Plate and serve warm.
