Skorthalia (or Skordalia) is a greek dip or sauce that can be made and used in a variety of ways. It can be served with fish or vegetables, but my preference is to serve it as a dip. It strangely tastes good on some crackers or with a meze platter.

How to Make Skorthalia
- 1 Large Potato
- 4 Garlic Cloves
- 1 Cup EVOO
- 2 Lemons, squeeze for juice
- Salt and Pepper to Taste
- Fill a pot with water, add a pinch of salt, and put over medium-high heat. Peel the potato and add to the pot. Let boil until a fork slides easily into the potato.
- When potato is done cooking, add to a blender or food processor. Crush garlic and add to the blender. Once it is smooth, slowly add the olive oil and lemon juice until all is well combined.
- If mixture is too thick, add some water, but no more than 1/4 cup.
Everyone has a preference for how garlicy they want their food. So if the garlic is too strong, add more potato, and if it’s not strong enough, add more garlic.
There are also some recipes that swap the lemon juice for red wine vinegar, both will give you a similar taste, so I’m personally impartial on which to choose. Hope you enjoyed this Skorthalia!
